Malfatti Spinach & Ricotta
INGREDIENTS:
For the Malfatti:
-400g spinach
-250g ricotta
-1 egg
-90g almond flour
-Salt
-Pepper
-Nutmeg
For the sauce:
-1 tomato in cubes
-1 small can of tomato sauce
-Condiments: salt, pepper, oregano, garlic powder, onion powder
Toppings:
-Vegan mozzarella
STEPS:
1.Finely chop the spinach and cook it over medium low heat until it is soft and free of liquid. Refrigerate.
2.Mix ricotta, egg and seasonings. Add the spinach and almond flour until you have a moldable dough.
3.Form small balls with your hands.
4.In a baking dish mix the tomato in cubes, tomato sauce and seasonings, add the balls and cover with mozzarella.
5.Bake at 180C for 1 hour or until golden brown.
