Anisette (anise seed, star anise, fennel herb and fennel seed), Aquavit (caraway, fennel herb, a few cardamom pods, two strips of lemon rind, and just a few(!) cumin seeds), and Citracello (orange, lemon, and just a tiny bit of grapefruit rind).

140 deg F, with 100 proof vodka, for 60-90 minutes. Strain with a coffee filter while fresh out of the bath, bottle and let cool. Add simple syrup after cooled.

    Oh! If anyone tries this, those jars were loose! Got to let vapors escape!

    I know ethanol vaporizes at 173 degF, but it’s not worth the risk

    There’s a bar in my city that sous vides a ton of their fancy cocktails and they’re amazing. Highly recommend doing this as you can infuse some whacky flavors and when its all done just strain and pour over ice.

    I make limoncello frequently and it always works great.

    I always let the mix cool in the bag (I use Ziplocs) because the hot alcohol fumes get to be a bit much. But other than that, this is pretty much my method.
