Chef Tony shows you how to make this savory brown gravy with a little help from our Greek Freak Mediterranean blend.

Ingredients
1 1/2 quart Chicken Broth
1 lb Chicken Wings, Browned
3 oz Bacon, Diced
8 oz Onion, Small Diced
1/4 cup Butter, Clarified
4 Garlic cloves, Minced, cloves
1 Bay Leaf
Black pepper to taste
Salt to taste
2 Tbsp Spiceology Greek Freak blend
1 Tbsp cream

Instructions
– Render bacon in clarified butter on medium heat in a medium to large sauce pot.
– After the bacon has rendered add in the onion, celery and carrot. Sauté until translucent.
– Once that has taken place add flour to create a roux.
– Add stock, browned chicken wings, Spiceology Greek Freak and bay leaf
reduce on a simmer for about 1 hour.
– Run through a sieve.
– Add a touch of cream and bring to a simmer.
– Adjust seasoning as needed and serve.
