✨ guys, it’s soup season. I’m trying to make a different soup every week, so stay tuned for more recipes. my lovely friends were coming to stay for the weekend, so I decided to welcome them with this soup along with some freshly baked garlic bread and a Caesar salad (girl dinner!!!!!)

INGREDIENTS ✨
6 slices of bacon, chopped
1 lb hot Italian sausage, casings removed
1 medium onion, chopped
4 cloves of garlic, minced
6 cups chicken stock
4 cups water
1 tbsp Italian seasoning
1 tbsp salt
6 medium russet potatoes, sliced and quartered
6 oz kale, chopped with stems removed
1 cup light cream

INSTRUCTIONS ✨
Heat your soup pot over medium high heat. Add chopped bacon and saute until crispy. Remove bacon from pot and fry on a paper towel. Add the Italian sausage. Saute sausage until browned, remove from pot and dry on a paper towel. Lower heat to medium and add onion to the pot and saute until translucent. Add garlic and cook for one minute. Add chicken broth, water, Italian seasoning and salt. Increase heat to medium high and bring soup to a boil. Add potatoes, cover with a lid, lower heat to medium, and let it cook until potatoes are fork tender (about 15-20 minutes). Remove lid and stir in the kale until it is cooked down. Add cream, give the soup a good stir, and you’re ready to enjoy! I like to top mine with crushed red pepper and shredded Parmesan cheese.
