Baked Creamy Spinach Dip

2 packages (12 ounces each) frozen chopped spinach, thawed
1 Tablespoon butter
2 garlic cloves, minced or 2 teaspoons already minced
1 Tablespoon all-purpose flour
1 can (12 ounces) evaporated milk
1/2 cup grated Parmesan cheese, divided
2 ounces cream cheese
1/4 cup ricotta cheese
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
1/4 teaspoon pepper
Bagel chips, crackers and/or Tostitos chips

Preheat oven to 350°

Squeeze dry the spinach, reserving one cup spinach liquid.

In a large saucepan, heat the butter over medium heat. Add the garlic and flour to make a roux. Cook about one minute. Whisk in evaporated milk and spinach liquid. Whisk in the cream cheese, ricotta cheese, spinach, salt and pepper. Cook and stir until blended and slightly thickened.

Transfer to a 1 1/2 quart baking dish. Bake at 350° for 25 to 30 minutes or until bubbly, and the top is lightly browned.

Top with the remaining Parmesan cheese and bake an additional 4 to 5 minutes, or until the cheese is melted. Serve with bagel chips, crackers, and/or Tostitos chips.

When I make creamed spinach I boil it then place into the food processor then I put oil into the pot and cook onoins then add the flour, it;s an old dish served with salt water boiled potatoes and spiced salsbury steaks done with beef ground meat and pork… I don't put nutmeg I put some Maggie..

  4. You say that the appetizer at the restaurant was priced at$18, I am curious at to how much these ingredients came up to. With todays prices it was probably pretty close to that, but you probably got a lot more. It looks yummy!

  8. Put a clean towel in a bowl n empty your spinach into the towel, then pick the towel up n twist tightly over bowl. All your juice will come out n no mess on you lol you made the whole spinach thing way to complicated. Do like I said n u will be set to move on lol

We will be making and serving this spinach dip to those who gather in our kitchen, to munch on, while the turkey bakes next week. I enjoy your posts so much, you and Melissa are precious together.   10. I absolutely LOVE that you don’t waste anything!!!! The opposite seems to be the custom in a lot of cooking programs, and it’s just such a waste to me. Like you, I always clean the containers, and my spatula is my best friend 😁👍🏽👍🏽

  11. I believe one of the things that has made your channel so successful is that it goes well beyond cooking. It demonstrates your loving relationship with each other. Just look at the way you take turns sharing that first bite! Tom worries that it might be too hot, or that he might have chosen the wrong kind of cracker. And Melissa, you reassure him that the one he chose was "just what I would have picked." Little loving acts of kindness like that are the difference between mediocre relationships and happy ones. The ability to both give and receive love — that's a true gift! Happy Thanksgiving to you and yours!

I appreciate you scraping everything and not wasting food, I can’t stand some cooking videos that I watch, they never empty the whole can of soup or scrape it out or dump cake mix in a pan and they never scrap the bowl to get the rest. Drives me absolutely crazy. Thank you Tom for scraping the bowls, getting as much food off your beaters and not wasting food!! Dip looks delious!!! Saving this to make for New Years 😊

  13. Waste not…want not….probably was a young pup…lol…you cook any way that you want Tom…and when they come back and say it didn't come out right…tell them…well it is because you didn't scrape the bowl clean as a whistle….lol

  18. Yum! One of our favorites… yours is a little different with the ricotta cheese… we also make it with spinach and artichokes… yum! You keep scraping three bowls clean…. waste not, want not…I was always taught! Happy Thanksgiving from our home to yours!
