Quick Stuffed Shells Recipe
Ingredients:
12 jumbo pasta shells
1 cup ricotta cheese
1 cup shredded mozzarella cheese (plus extra for topping)
1/4 cup grated Parmesan cheese
1 cup chopped fresh spinach (or frozen, thawed and drained)
Salt and pepper, to taste
2 cups marinara sauce
Instructions:
1. Cook the Pasta: Begin by boiling a pot of salted water. Add the jumbo pasta shells and cook until al dente, following package instructions. Drain and set aside to cool slightly.
2. Prepare the Filling: In a mixing bowl, combine the ricotta cheese, shredded mozzarella, grated Parmesan, chopped spinach, salt, and pepper. Mix until well combined.
3. Stuff the Shells: Carefully fill each cooked pasta shell with the cheesy spinach mixture. Use a spoon or piping bag for easier filling.
4. Prepare the Baking Dish: Spread a thin layer of marinara sauce on the bottom of a baking dish to prevent sticking.
5. Assemble the Dish: Place the stuffed shells in the baking dish, seam side up. Pour the remaining marinara sauce over the top of the shells, ensuring they are well covered. Sprinkle additional mozzarella cheese over the top for a cheesy finish.
6. Bake: Preheat your oven to 375°F (190°C) and bake the stuffed shells for about 25 minutes, or until bubbly and golden.
7. Serve: Remove from the oven and let cool for a few minutes before serving. Enjoy your quick and delicious stuffed shells!
