Roasted Potatoes, corn, & Green Bean Salad
400° oven
2 lbs baby Red potatoes (1-inch pieces) Parboil for about 8-10 minutes till slightly firm inside and soft outside
1 1/3 C. Frozen or fresh corn
2 C. Cut green beans (ends trimmed)
3/4 C. Chopped green onions
1 1/4 C. Halved grape tomatoes
1 1/2 tsp Salt for boiling
1 1/2 tsp Seasoned Salt as needed
1/2 – 1 tsp Paprika
1/2 tsp Garlic powder
2 Tbs Olive Oil (for potatoes)
Olive oil for green beans (as needed)
3/4 bottle 24oz. ZESTY ITALIAN DRESSING
Parmesan to sprinkle
Pepper as needed
Nonstick spray
Preheat oven to 400
Parboil your potatoes, then set them in a strainer to get the water off.
Clean and cut your green beans
Mix your spices into the potatoes
Lightly spray your baking dish, place your spiced potatoes onto the shelf.
Using the same bowl you had the spice potatoes in, add your green beans, add a bit more olive oil, and just use the spices from the bowl for these.
Potatoes will bake for about 20-23 minutes, FLIP HALF WAY THROUGH!
Green beans are only in the oven for about 8 means on the bottom rack
Add potatoes to a big bowl, with your beans, corn, green onions, and tomatoes.
Sprinkle a little pepper and add your zesty salad dressing onto it. Sprinkle it with your favorite cheese and toss it all together.
Great hot or cold!

A new recipe for you 😁 It looks good. I want to tell you something funny. You remember that our refrigerator stopped working? Dan talked on the phone to a repair man and he said for us to unplug it and let everything melt off then plug it in. We did that a couple of weeks ago and it didn’t work. Dan unplugged it and plugged it back in nothing so he was going to make an appointment to have it fixed but a few days ago it started on its own. I watched it for a couple days to make sure it still worked. It does so I bought our turkey today and it looks like we will have Thanksgiving dinner after all. I wouldn’t be able to with the old smaller one we have. A little Thanksgiving miracle! We are so grateful. Take Care Teresa❤
