PISTACHIO & WALNUT BAKLAVA
This nut-cheesecake is sweet and tangy, smooth and luxurious. It is best prepared the day before making it a perfect holiday dessert to take the stress out of entertaining.

INGREDIENTS

For filling:
454g cream cheese, softened
1/2 cup full fat sour cream
3/4 cup granulated sugar
1/4 tsp salt
2 large eggs

Phyllo /Filo crust:
6 sheets store-bought pastry, thawed
1/2 cup butter, melted
1 cup ground nuts, any

Honey syrup:
1/4 cup sugar
1/2 cup honey
1/4 cup water
Garnish: nuts

RASPBERRY CHEESECAKES
This delicious easy to make cheesecake has no crust at the bottom meaning fewer ingredients to use and straight to business 😊
This cheesecake is dense, rich, and creamy. It sets into a semi-solid gel.

Tips:
Coat the fruit with flour so that they do not sink to the bottom of the cake.
The cheesecake is sensitive to being baked under direct heat or being overcooked. You may cover it with foil to avoid it cracking down the middle.
Grease the pan including the sides before pouring your cheesecake, the cake will shrink from the sides of the pan as it cools down, freeing the cheesecake naturally.

FOR COOLING and REFRIGERATION: This is an important last part of cooking the Cheesecake. Once the baking time lapses, do not take it out of the oven immediately. Open the oven door ajar for an hour and take it out after an hour. From here you can cool it off totally at the tabletop.
From there refrigerate it overnight or for 6-8 hours. Ideally, cut it the following day.

500g cream cheese
1 cup castor sugar
3 large eggs
2 tsp vanilla extract
Zest of medium lemon
250g fresh raspberries
Butter to grease the pan

MIXED BERRIES NO-BAKE CHEESECAKE

This cheesecake is made of 3 primary steps: the Base, Filling, and Sauce or Topping. The base is the biscuits or cookies as some call them, cream cheese and whipping cream with gelatin for a filling, and mixed berries for the sauce in that particular order. These are easy-to-follow steps.

Blooming (swelling) powdered gelatin takes 5 to 10 minutes. Please make sure that your ingredients are fresh and stored in tightly closed containers before use.
Never boil the gelatin to avoid it loosing its binding nature. Once it is hot, remove it from the heat and continue stirring until it melts. Cool it a little bit before using it.

I have adjusted the quantity of the melted butter for the biscuit/cookie base on the written ingredients below so that it’s not as crumbly as it is in the video.
The cookies used are sweet and have coconut, if you’re using different ones without sugar, add sugar and mix them together. The coconut is optional.

I regret the baking pan size because I like height when baking. This one used here is 22cm and I prefer 18 cm baking pan for height and width.
