    I would try to avoid fat in my meat so wagyu is not my style, but happy for ya

    Wagyu is good in its own way. It is very fatty, so doesn’t need much cooking. Fun every once in a while.

    There’s two sides to a primal cut. Chuck side and a loin side. Def borders closer to the loin side. 100% ribeye

    Next time ask your butcher for the chuck end. They always look at me funny and say I know the good shit, but that’s the end with the fat circle aka “eye”.

    Wow its funny seeing so many people on this subreddit not knowing the difference from a ribeye and a NY. I’ve been a butcher for over 10 years and will tell you this is most definitely a New York Strip.
