Christmas Standing Rib Roast

    I decided to bring something nice when I visited my family for Christmas this year. Got a 3 bone choice roast from my butcher in Atlanta and loosely followed Alton Brown’s recipe. I made a blend with fresh sage, oregano, rosemary, thyme, as well as garlic and shallot + olive oil. Then, I coated the roast in olive oil, salt, pepper, and the herb blend. I also put some of the herbs and some red wine + vegetable broth in the bottom of the pan to make the juice.

    Roasted in the oven at 250 until around 119 internal temp, took it out and let it rest covered for probably 45 minutes while I cooked some potatoes. Then I returned it to the oven at 550 for around 6 minutes just to get a little extra crust until it looked right. Final internal temp was 130. Made a lot of family happy!
