Beefy Jalapeno Poppers

    RECIPE

    1lb Ground Beef

    1 tsp Salt

    1/2 tsp Black Pepper

    1 Jalapeno

    6 Oz Cream Cheese

    8 Slices of Bacon

    3 Oz Ground Pork Rinds

    2 Eggs

    1/4 Cup Heavy Cream

    1) Grab some aluminum foil and shape into halved jalapeños.

    2) Add all of you ground beef to a bowl along with your salt and 1/4 tsp of black pepper. Mix until homogenous. Take 2 oz portions of your beef and flatten it. Drape this over your foil and press in removing any excess.

    3) Place them onto a parchment lined baking sheet and place them into an oven at 375°F for 5-7 minutes or until firm to the touch. Let rest for 5 minutes before removing from the mold.

    4) In a food processor, add your cream cheese and jalapeno and process until light green.

    5) Use a spoon to fill your ground beef with your cream cheese.

    6a) Wrap each one in a strip of bacon. Use a toothpick to keep bacon from shrinking and falling off. Place this back into your 375°F oven for 15-17 minutes or until the bacon is at desired doneness.

    6b) Add your heavy cream and eggs to a bowl and whisk until homogenous. Add your pork rinds to a plate and add 1/4 tsp of black pepper and mix. Take one of your beef and cream cheese and dip into your milk wash. Let that drip off and coat in your pork rinds. Place this onto a parchment line baking sheet. Repeat until done. Place this back into your oven at 375°F for 7-9 minutes or until crispy.
