    The stir-fried shredded potatoes is a popular Chinese family dish. It is crunchy, sour, and a little spicy.

    **Ingredients:**

    * 1 russet potato (~1lb)
    * 1/2 bell pepper
    * 2 dried chilies
    * 2 cloves of garlic

    **Condiments:**

    * 1.5 tbsps black vinegar or white vinegar
    * 1 tsp salt
    * 2 tsps sugar
    * 1 tsp Sichuan peppercorn oil

    **Directions:**

    1. Peel and shred the potato. Keep the shredded potato in cold water to prevent it from turning brown.
    2. Slice the green pepper and garlic.
    3. Rub the shredded potato with hands in water and then strain the potato. This is to wash off as much of the potato starch as possible.
    4. High heat: stir fry the garlic and dried chilies for 20 seconds. Add the shredded potato into the wok and stir fry for 1 min. Add the vinegar, stir fry for another 30 seconds. Add the green pepper and stir fry everything for another minute.
    5. Heat off: Add the condiments and mix well. Enjoy!
