Thai Holy Basil Stir-fry with white jasmine rice (Pad kaprow Moo)

    **Ingredients**

    * 300g Pork mince
    * 100g Chicken stock
    * 50g Holy Basil leaves
    * 45g Stir-fry sauce (25g Soy sauce, 15g Fish sauce, 5g Sugar, 1 tsp White pepper)
    * 35g Fresh herb mix (15g Garlic, 10g Fresh chilli, 10g Coriander root)

    **Directions**

    1. Assemble your stir-fry sauce and mix well.
    2. Blend or Pound all the ingredients for Fresh herb mix
    3. Heat your pan and add oil. Wait until pan is medium-high heat.
    4. Add your Fresh herb mix to the pan and stir-fry until garlic turns golden.
    5. Add your pork mince and stir-fry on high for 1-2 minutes.
    6. Add your Stir-fry sauce and stir-fry until all sauce absorbed.
    7. Add chicken stock and stir-fry until dry.
    8. Add Holy basil leaves and stir-fry until leaves are fully coated in sauce.
    9. For crispy egg, separate the egg white from the yolk and cook the egg white in high-heat oil until crispy edges appear. Carefully add the yolk on top and turn off the heat after 30 seconds to ensure yolk remains runny.
