Mushroom Thyme Soup

    I was getting tired of Soup stock for my electrolytes. This is awesome, with some protein to boot!

    **Ingredients:**

    * 2 cups Chicken Stock
    * 1 teaspoon minced fresh thyme
    * 1 cup thinly sliced mushrooms (about 5 large ones)
    * 2 tablespoons olive oil
    * 1/4 cup Pinot Grigio wine
    * 1 TBSP Bourbon
    * 1 egg
    * 2 tablespoons cream
    * Salt and pepper to taste

    **Directions:**

    * Heat the stock with the thyme.

    * In a skillet, sauté the mushrooms in the oil for 2 minutes.

    * Add the wine and bourbon, cover the skillet, and simmer over lo heat for 5 minutes.

    * Pour into the hot stock. Remove from the heat and let cool for 1 minute.

    * Beat the egg with the cream. Add to the consommé.

    * Check the seasoning, add salt and pepper to taste, and serve immediately.
