    Chimichurri is the only sauce I like on my steaks. Every once in a while I like to switch it up from my standard salt and pepper seasoning.

    Steak was seared on a ripping hot cast iron, with the thinner parts of the steak sliced off first as they reached medium rare before returning the rest of the steak to the skillet to finish (gaucho style)
