Crispy salmon cake sandwich with Old Bay sauce (recipe in comments)

Ingredients:
Salmon cakes: – 12 oz cooked shredded salmon (I used leftovers that I baked the night before but canned works too) – 1/2 C mayo – 2 eggs – 1 1/2 C crushed pork rinds – seasoning to taste (I use garlic powder, onion powder, smoked paprika and Old Bay)
Sauce: – 1/2 C mayo or plain yogurt – 2 T Old Bay – zest of 1/2 lemon
Directions:
Salmon cakes: 1. Mix all ingredients together in a bowl and combine well 2. Bring a large pan up to medium temp, add 3 T olive oil and let olive oil heat until glistening 3. Make salmon patties with a 2 T measuring scoop, flatten in your hands before setting in hot oil 4. Cook each side until golden brown, about 3 minutes each side 5. Rest on a plate lined with paper towel
Sauce: – Combine all ingredients
I served this on a Franz Keto bun with pickle and butter lettuce with a side of Quest chips!
