Picked up this beautiful A5 NY strip from Costco for $80 (absolute screaming deal for this quality of steak) and prepared it 3 ways.

Course 1: Kuahiyaki skewer with fresh grated wasabi root and shiso leaves

Course 2: Wagyu nigiri with wasabi and garlic chips

Course 3: Block cut, seared on all sides, optional garnish of fresh wasabi and beaten raw egg for dipping (egg not pictured)

Also made some courses of grilled miso garlic glazed bok choy and Japanese green onion skewers between the Wagyu courses and served a set Japanese pickles on the side.

Probably the best thing I’ve ever eaten. The charcoal burns hot and long and smokeless, creating a beautiful crust. The fat drippings from the steak vaporize on the hot charcoals and bathe the steak in white smoke that imparts unreal flavor. Infrared heat from the charcoal penetrates the steak and renders the fat on the inside so that each piece almost pops like a balloon when you bite it. It’s like an explosion of fatty, juicy, umami goodness with every bite.

First time I’ve tried this and couldn’t be happier with the results.
