Ingredients
For chicken
2 chicken thighs skin on, on bone
Tsp smoked paprika
Tsp garlic powder
Tsp onion powder
Tsp salt
Tsp pepper
Olive oil
For the sauce
2 tbsp extra thick double cream
1/3 red onion – diced
One garlic clove minced
6 Cherry tomato’s – chopped in half
Half a tsp tomato puree
100g spinach
Fresh parsley
Little bit of grated cheddar cheese
Tsp basil
Tsp paprika
Tap cayenne pepper
Tsp oregano
Tsp salt
Tsp pepper
Tbsp lemon juice
Method
Cover the chicken in the seasoning and olive oil and rub it all in
Sear chicken on medium high heat in pan until golden brown on each side
Then stick in the pre heated oven at 200 Celsius for 15-20 mins
Whilst the chicken is cooking
On a medium low heat Sweat down the onions till translucent
Then Chuck in cherry tomatoes for 3 mins
Then add garlic for 30 secs
Add tomato purée and all spices
Cook for 2 mins
Add spinach
Let it shrivel and then add the cream and cheese
Bring to medium heat for 30 secs then back down to low and cook for 2 mins
Add lemon juice and stir and finish with fresh parsley
Take chicken out and eat
