I shied away from baking because of the restrictive nature of the recipes. But this is one that I use as a base for all sorts of creations (orange zest with cranberries, raisins and cinnamon, chopped dates and walnuts, etc.)
325g bread flour (I use Bob’s Red Mill because they are local) plus some if needed
34g sugar
34g butter (or shortening)
7g yeast (I use both types, adding them to the mix without blooming)
4g salt
1 egg
180ml warm water (added while the mixer is running)
Knead for 10 minutes in the mixer.
3 proves (the timing varies- 75 minutes for the first, 60 for the second, 30 for the last)
400f for 20 minutes, turn the oven off, 5 out of the pan.
