    That eggplant is undercooked.
    You better grill them instead of using the torch, or use the true balkan way, burn over the gas stove.

    I’ve made this before but you also blitz in stale toasted then pulverized pita bread.

    For anyone that doesn’t want to go through the process of making it, you can typically buy it in large glass jars for about $8-10 at your local Mediterranean markets.

    Goes great with bread, sausage, and I even recently tried it with a nice medium-cooked steak filet and I swear it’s one of the most delicious combinations I’ve had.

    I’ll be honest, there’s some pretty key issues with this recipe. If you’re interested, it’s probably best to just buy a jar from a local Balkan or Mediterranean store for maybe $5. Try to pick one imported from an Eastern European country
