### Ingredients
**Creamy Lemon Pasta**
* 100g dry pasta (2 servings) – I used Fusilli Col Buco * 3 tbsp lemon-spice mix (@sit.seasons) * 3/4 cup coconut milk * 1/2 cup pasta water * 1 tbsp lemon juice * 1 tsp lemon zest * 1 tbsp olive oil
**Lemon & Herb Tofu**
* 1 block of firm tofu * 1/3 cup plant milk + 1 tsp lemon juice * 1/2 cup breadcrumbs + 1 tbsp lemon spice mix * 3 tbsp cornstarch + 2 tbsp lemon-spice mix
**Garnish**
* lemon zest * coriander * lemon slices
### Instructions
1. Boil pasta according to package instructions. Drain and keep the pasta water.
2. Slice the tofu into square slices about 0.5cm thick. Dip in the plant milk mixture, followed by corn starch, plant milk and finally, breadcrumbs. Pan fry in oil until crispy.
3. Add olive oil to a pan. Add your lemon-spice mix, pasta water and coconut milk. Stir for a few minutes. Add in lemon juice and lemon zest. Mix well until mixture thickens slightly.
4. Add in your pasta and give it a good toss until well combined. Garnish with lemon zest and coriander. Serve with crispy sliced lemon & herb tofu. Enjoy!
Do we really need the shot of the person taking a bite and excitedly enjoying the food? So many of these gifs have it now for some reason.

Looks runny, not creamy. Any why make such a mess with the flour? I doubt there’s much overlap between vegan chefs and the how to basic crowd.

For the lemon season packet it looks like it’s mostly just nutritional yeats, lemon zest, and lemon pepper. Ingredients are on the manufacturer website.

That’s not a schnitzel, and I’m not saying that because it doesn’t have meat but because it’s not thin – the whole point of schnitzel is that it’s very, very, thin. It’s not a synonym to “breaded and pan-fried”.

The coconut milk with lemon will make this taste like more thai than anything, but without the extra spices to push it further in that direction. I think it would taste quite odd.
