This is my recipe for Olio extra vergine di oliva aromatizzato al limone

**RECIPE**
Zest of an organic lemon
150ml of extra virgin olive oil
new glass bottles (or used and sterilized)
**Procedure:**
1. ​
remove the lemon peel avoiding taking the white part that is too bitter
2.
heat the oil in a saucepan over low heat for one min – do not exceed 60-65 °C (if you don’t have a food thermometer, test it with your finger but pay attention)
3.
turn off the flame and let it cool down
4.
repeat the operation one more time
5.
sterilize a glass bottle in boiling water, dry well, put the lemon oil in it and keep it in a cool place
