What’s the process here? First time I’ve seen something like this.

Does the ground beef ball not dry out and get grainy?

That looks perfect. I tend to use steak tips or left over brisket for my meat choice in chili (borrowed from a restaurant guy that makes an awesome chili). A family favorite for sure.

Looks killer! I love a good chili I haven’t done mine on the smoker but I have added left over brisket in it before my chili recipe is this

I take onion, red pepper, yellow pepper, Serrano, jalapeño, poblano and I dice them and broil them in the oven. I take my ground beef and cook till it’s almost done and I add a can of tomato paste in with it to get a rich beef tomato flavor. I add kindney, black beans and for pinto beans I just add a good flavored bush or B&M baked beans. I add diced tomatoes, peeled whole tomatoes and rotel . Garlic, salt, pepper, cumin, smoked paprika, oregano. I add sausage as well, and chunks of ribeye. I add my fav steak seasoning to the pot and maybe a good splash or bbq sauce. I cook it for awhile and I add a bottle of beer. Hands down the best chili I’ve ever had and I’m a chili connoisseur and try as many as I can.
