    ### Ingredients

    * 2 tbsp extra virgin olive oil
    * 4-5 garlic cloves, minced
    * 1 tsp chili flakes
    * 1 white onion, diced
    * 1 tbsp capers
    * 1 cup kalamata olives, pitted
    * 1 can good plum tomatoes
    * 1 tsp bicarbonate of soda
    * 1/2 tsp sugar
    * 300g spaghetti

    ### Instructions

    1. Boil a pot of water. Add some salt then spaghetti, cooked Al dente.
    2. Heat up a pan on low heat, add the olive oil then garlic and chill flakes. Allow to cook down until garlic turns light brown.
    3. Add the onions, capers and olives. Cook for 1-2 mins then add the tomatoes with bicarb soda and sugar. Allow to simmer for 8-10 mins.
    4. Add the pasta with some pasta water and mix until all combined. Serve up and enjoy.

    no anchovies in a puttanesca is an actual sin

    also garlic should never be the first thing you add to the pan, it should always be the last thing. this guy killed basically all the flavor of the garlic by cooking it for so long

    garlic should only be cooked for 10-20 seconds. as soon as you can smell the garlic you have to cover it with the tomatoes to capture all the garlic flavor. it makes a HUGE difference

    Don’t let pasta wait for the sauce. Either do it in time simultaneously or prepare the sauce first and let it simmer. Otherwise fine for a vegan version
