Tilapia with chermoula, spiced rice, and roasted green beans (left them in a little long…still tasted good!)

Any tips for a newbie on making sure you always have enough veggies on your plate? That’s what I seem to struggle with the most. TIA!

    This looks delicious.

    As an old fart I remember childhood dinners being

    – Meat
    – Starch
    – Salad
    – A green veggie
    – An orange veggie

    So on your plate I would cut the rice in half and add a starchy orange veggie like carrots or squash or sweet potato. Have some salad as a first course.

    Make sure your grains are whole. Half your plate should be veggies or, of that half, 60% veggies and 40% fruit.

    Sometimes it’s good to have two vegetables. As u/GetOffMyLawn suggested, adding a small serving (half cup or so) of potatoes or other starchy vegetable is a great way to boost your veggies. Yes, you can even do that with a whole grain, but hold your whole grain serving just to a half cup cooked.
