    Ingredients:
    – 120g Biscuits
    – 1 Mango
    _ 250g Mascarpone
    – 50g Sugar
    – 75ml Heavy cream
    – 1/2 Tsp Vanilla Extract
    Instructions:
    1. To make the biscuit base, finely crush the biscuits by putting into a sealed plastic bag and bashing with a rolling pin (alternatively, pulse to crumbs using a food processor)
    2. Pour the melted butter over the biscuit crumbs and mix, until thoroughly combined
    3. Put the crumb mixture into a mold and press down evenly with your fingers or using a spoon
    4. Cut the mango into small cubes
    5. Blend the mango cubes using an immersion blender until smooth
    6. In a bowl, put 250g Mascarpone
    7. Add 50g Sugar
    8. Add 1/2 Tsp Vanilla Extract
    9. Mix well
    10. Add 75ml Heavy cream
    11. Mix well
    12. Spread the mascarpone cream on the surface of the biscuits
    13. Pour the Mango coulis on top
    14. You can refrigerate it if you want
