Roasted Za’tar & Sweet Potato Nourish Bowl

    ### Ingredients

    **Dressing**

    * 4 tbsp extra virgin olive oil
    * 1 tbsp balsamic vinegar
    * 1 tbsp chopped capers
    * 1 tsp wholegrain mustard
    * 1 tsp maple syrup
    * The juice of 1/2 lemon
    * Salt & pepper to taste

    **Cauliflower**

    * 1/2 head of cauliflower – cut into small pieces
    * 2 tbsp zataar spice blend
    * Olive oil for roasting
    * Salt & pepper to taste

    **Other**

    * 1/2 large sweet potato – chopped into cubes
    * 100g cooked puy lentils
    * A generous handful of rocket
    * 1/2 small red onion- finely chopped
    * A generous handful of rocket
    * 1/2 small red onion- finely chopped
    * Handful of mint – finely chopped
    * A drizzle of tahini
    * A sprinkle of roasted tamari super seeds mix

    ### Instructions

    1. Add the chopped sweet potatoes to a large baking tray and drizzle with some olive oil, salt & pepper. Roast in the oven at 200 degrees Celsius for 30-35 minutes until they are soft.
    2. Add the cauliflower and all the other ingredients to a large bowl and mix well until coated. Place the cauliflower onto a baking tray covered with parchment paper and roast in the oven for 20-25 minutes.
    3. To make the dressing add all the ingredients to a bowl or jar and mix until well combined.
    4. To assemble your salad add the lentils, rocket, sweet potatoes, cauliflower, red onion and mint to a large bowl. Sprinkle with the seeds and pour over the dressing. Drizzle some tahini and mix well.
