Roasted Potato Salad (inspired by the Lebanese Batata harra)

    ### Ingredients

    * 1kg potatoes
    * 2 small red peppers

    **Dressing**

    * 5 Tbsp olive oil
    * juice of 1 lemon
    * 2 cloves minced garlic
    * 1 Tsp harissa and paprika
    * salt to taste
    * 1 1/2 Tbsp maple syrup

    ### Instructions

    1. Chop potatoes and peppers and drizzle with olive oil, salt and pepper.
    2. Mix and bake at 200C/400F for 30mins.
    3. Mix cilantro and chopped walnuts
    4. Assemble everything in a bowl.

    I used to go to this Lebanese bakery that had Syrian Potato Salad. It seems like this is similar to that and that was absolutely bomb, so this looks fantastic.

  4. Not really a salad, more just roasted potato and red peppers . To be called a potato salad it would need to be served chilled. However, you can call it whatever you want.

    I think at some point I lost the definition of the word salad. First I thought it meant a dish of raw leafy greens with a dressing, then I thought it meant a dish of any cold vegetables with a dressing… now I’ve upgraded it to mean hot or cold vegetables with a dressing. Am I right yet?
