This is just some farro, felafel, and a mix of roasted veggies (red onion, carrots, summer squash) with some tahini-lime sauce. Lately I’ve been cutting up my veggies once or twice a week and storing in airtight containers in the fridge, then I pop them on my toaster oven to roast at 390 for around 20 minutes. Super fast and yummy!
