Another top notch tin from Ferrigno! I’m always surprised at the amount of toppings they give. There had to be a good 3-4 tablespoons of tapenade. More than enough for each bite, with leftovers to spread onto sourdough. Savory, salty (but, not too salty), good quality fish that becomes infused with the flavors in the tin.

Couple of things to note. The use of sunflower oil seems odd, considering that EVOO seems to be their choice oil. Ferrignos can vary in the amount of scales or tails left on the fish. Neither of those things has bothered me in my experiences. I actually kinda like the tails.

    I love this tin. With the assertive flavor from the tapenade, I think you would not be able to tell what oil is used, so a neutral oil like sunflower (hello flower bot) is the smart choice.
