Kung pao noodles with tofu

    ### Ingredients

    * 1 tsp whole Sichuan peppercorns
    * 1/2 onion, diced
    * 2 garlic cloves, roughly chopped
    * Thumb-sized ginger, grated
    * 5 dried chili, chopped
    * 2-3 spring onions, chopped
    * 1-2 tbsp dry roasted peanuts, chopped
    * 1 tbsp sesame seeds
    * 2 pack noodles of choice

    **Tofu**

    * 1 block tofu
    * 1 tbsp soy sauce
    * 1-2 tsp mixed sesame seeds
    * 3-5 tbsp cornstarch

    **Sauce**

    * ¼ cup light soy sauce
    * 1 tbsp Chinese black vinegar
    * 2 tsp dark soy sauce
    * 1 tsp sesame oil
    * 1 tbsp sugar
    * 1/2 cup veg stock
    * 2 tsp cornstarch

    ### Instructions

    1. Heat a dry pan then add the Sichuan peppercorns. Toast for 2-3 mins. Place in a pestle and mortar and grind to a fine powder. Set aside.
    2. Slice the tofu into cubes then place in a bowl. Cover with sesame seeds and cornstarch. Give it a mix.
    3. Heat up a pan/wok to medium/high heat, add oil the the tofu. Fry till all sides are golden brown and crispy then remove and set aside.
    4. Add the sauce ingredients into a jug and mix well. Set aside
    5. In the pan add onion, garlic ginger and fry for 2 mins. Add the chili, fry for another min.
    6. Add the noodles, sauce the sauce will thicken then add the tofu, spring onions, peanuts, grounded Sichuan peppers and sesame seeds. Mix, serve and enjoy!
