Asian Rainbow Tempeh Noodle Salad

    ### Ingredients

    **Noodle Sauce**

    * 2 servings of gluten free noodles
    * 1 tbsp peanut butter
    * 1 tbsp sesame oil
    * 1 tsp rice wine vinegar
    * 1 tbsp soy sauce (tamari for gluten free)
    * 1 tsp chili flakes
    * 1 tsp ginger paste
    * Hing
    * 3 tbsp water

    **Sweet Chili Tempeh**

    * 1 200g block of tempeh
    * 1/2 tbsp soy sauce
    * 1 tbsp sesame oil
    * 1 tsp mirin
    * 1 tbsp sweet chili sauce
    * 1 tsp corn starch
    * 2 tbsp water (add more if it’s dry)

    ### Instructions

    1. Chop up vegetables into thin slices. (carrots, purple cabbage & spring onions in video)
    2. Pan fry tempeh cubes until crispy.
    3. Add in sauce mixture and give it a good mix.
    4. Assemble all the ingredients in a bowl, and add noodle sauce.
    5. Give it a good mix and add toasted sesame seeds!
    6. Serve.
