### Instructions
1. Pan on medium heat, add the onion, garlic, ginger, spring onions, thyme and jerk paste. Fry this for a few mins. 2. Add the lentils, tomatoes, sugar and veggie stock. Cover and simmer for 40mins or till lentils are cooked. 3. Serve with some rice and plantain. Enjoy.
