Homemade salsa and Greek yogurt on top sprinkled with parsley and cilantro.

Aldi has plant based queso very clean ingredient ive been wanting to try and it was fantastic. I also put tiny pinch of shredded Mozzarella too. Refried black beans home made [ you can use ground turkey or chicken or whatever]

Oven to 375

1 can organic black beans into medium pot with liquid.

A touch of extra virgin olive oil and stir in.

Cumin, paprika,cayanne pepper, onion and garlic powder, black pepper and chili powder in. [Amounts are not measured i eye everything, go with small amounts first add later] you can go a bit heavier with the chili powder than some od the others.

Stir well and bring to bubble.

Reduce heat and simmer for 10 mins stirring occasionally. You want it to be bubbling but not boiling.

After about 8 mins or so, smash and stir with potato masher about half the beans. This will thicken it and also give that refried texture.

Keep cooking and mashing more if you need till its thick to your liking. Turn off heat and cover.

Halve about 5 or 6 mini bell peppers [they usually come in a bag]

Lay them on sheet pan open side up.

Top with black beans, plant queso,pinch mozzarella, salsa, greek yogurt, parsley and cilantro mixed and chopped finely.

Let me know if yall try it. I just did it on the spot as i do most of my cooking. Its important to eat at home and cook!!
