I bought smoked salmon the other day and was trying to think of some ideas that were suitable for meal prepping.

Niçoise salad came to mind.

I roasted potatoes, blanched green beans, boiled some eggs, and assembled with the salmon, tomatoes, and lettuce. Tossed with a red wine vinaigrette.

My potatoes were roasted with smoked paprika, garlic powder, and onion powder for some extra flavor.

Really tasty and meal prep friendly – by keeping components separate.
