I posted here not long ago wondering if anyone had frozen roasted veggies before with good success upon re-heating. I did some online research and decided to give it a try. Per the recommendations, I popped the roasted veggies into the freezer right when they were done roasting in the oven, on the same pan. I let them freeze for about an hour and a half, then I transferred them into freezer-safe bags. For re-heating, I popped them in my toaster oven on 350 degrees F for 3.5 min, and they were delicious!! Only a hair less delicious than freshly roasted! So I will DEFINITELY be freezing lots of roasted veggies. Pic here is my breakfast yesterday where I enjoyed them as a side to a great egg casserole also packed with veggies
