Blueberry Spinach Salad with Salmon

    We recently discovered how delicious bilberries (wild European blueberries that have 4 times more antioxidants than store-bought blueberries) are in salads. Loved it so will definitely make this again.

    **Blueberry Spinach Salad with Grilled Salmon**

    2 servings

    2 handfuls of fresh spinach leaves

    1 cup fresh bilberries (wild European blueberries)

    1/3 cup walnuts

    1 avocado

    1/4 cup feta cheese

    2 salmon fillets

    **Dressing**

    3 tablespoons olive oil

    2 tablespoons balsamic vinegar

    1 tablespoon lemon juice

    1 teaspoon Dijon mustard

    1 teaspoon honey

    Salt and pepper

    ​

    1. Grill the salmon (or trout) until it’s cooked through and slightly charred on the edges. Season the fish with salt, pepper, and any preferred herbs or spices.
    2. In a large mixing bowl, combine the fresh spinach, blueberries, chopped nuts, avocado slices, and feta cheese.
    3. Add the grilled fish on top of the salad.
    4. In a separate small bowl, whisk together the dressing ingredients, adjusting the sweetness and acidity to your taste.
    5. Drizzle the dressing over the salad and gently toss everything together until well combined.
