Roasted Veg Chickpea Salad

    ###Ingredients

    * 1 medium size courgette – cut into half moon slices
    * 2 bell peppers – chopped into small pieces
    * a drizzle of olive oil
    * 1 tbsp dried mixed herbs
    * salt and pepper to taste
    * 500g cooked chickpeas
    * 200g cherry tomatoes – cut into quarters
    * 3 spring onions – finely chopped
    * a handful of mint leaves – chopped
    * a handful of basil – chopped
    * 1 tbsp small capers

    **Dressing**

    * 4 tbsp extra virgin olive oil
    * the juice of 1/2 lemon
    * 1 tsp dijon mustard
    * 1 tbsp nutritional yeast
    * 1 tbsp apple cider vinegar
    * 1 garlic clove – crushed
    * salt and pepper to taste

    ###Instructions

    1. Add the courgette and pepper to a large baking tray. Drizzle with olive oil, dried herbs, salt and pepper and toss everything together. Roast in the oven at 200 degrees Celsius for 20 minutes.
    1. To make the dressing add all the ingredients into a jar and shake well until combined.
    1. Add the chickpeas to a large bowl together with the roasted veg, tomatoes, spring onions, fresh herbs and capers. Pour the dressing on top, mix well and enjoy!

    Any reasons not to roast the chick peas with the veggies?
