Tried cooking an eye of round roast for the first time after spotting this Australian wagyu beauty at my local butcher shop ($18 for a 1.5lb cut!). Pan seared,then cooked in the oven at 170deg for ~3 hours. Made an “au jus” sauce using the rosemary/garlic/pan juices. Huge hit with our guests. Best steak money ever spent 😆.

    I frequently get a round roast stab it with my rotisserie skewer and about an hour on the BBQ and she’s perfect, slice thinly and devour.

    Looks great, i was making these a few months ago just for some lean protein. wagyu sounds great though.

    For the sauce I deglazed the pan (that had rosemary, garlic gloves and juices) with red wine, then added beef broth, porcini mushroom,onion and mustard powder. Finally, I filtered the sauce and thickened it slightly with corn starch.

    I’ve always wondered how a round cut would be off a wagyu beef. Like you see people cut Wagyu ribeyes and strips all the time but it’s nice to see how an eye round holds up.
