Lunch – sardines, cucumbers, olives, red pepper spread, wholegrain bread

    Ingredients:

    * S&F sardines in sunflower oil
    * Giogrio hot ajvar (grilled red pepper and eggplant relish)
    * About 1/3 of an English cucumber, sliced
    * 4 olives
    * 2 slices Stonemill sprouted rye and 12-grain bread

    Method:

    * Slice the cukes, open and drain the can, put it all on a plate (or plates)

    Note: these sardines are bone-in which makes them messier and fiddlier to eat. I buy the filleted/boneless ones and/or sardines in olive oil when I can afford them, but this one was cheaper and perfectly good quality. In general I don’t pay attention to brands unless there’s a noticeable difference in style/recipe or quality of product.

    Second note: I work 100% from home, so this is doable for me to just prepare on an average weekday lunch. If you work outside the home, this might not be as doable, but you could pack it in containers. It also makes a good dinner, I have variations on this for dinner often.
