12 MEATBALLS (4 SUBS)
Ingredients:
• 1 pound ground turkey (85/15)
• ½ pound Italian turkey sausage
• 1 large egg
• ½ cup Panko breadcrumbs
• ¼ cup Parmesan cheese (more for garnish)
• ½ teaspoon Salt
• ½ teaspoon Pepper
• ½ teaspoon fennel seed
• 1 tablespoon parsley
• 4 Hoagies (or whatever type of bread you want)
• Shredded mozzarella cheese
• Sliced provolone cheese

Directions: Preheat oven to 375 degrees F. Combine all this stuff in a mixing bowl and mix it up really good. Roll the meat mixture into 12 meatballs – about 1 – 1 ½ inches in diameter. Place the meatballs on a baking sheet (I prefer and deeper pan with wire rack). Bake the meatballs for about 30-40 minutes, give or take. Here’s the deal…just make sure they’re done! Some people cook them less, some people cook them more. Just make sure they are at least 165 degrees internally.
Once the meatballs are finished, remove them from the oven. Take a Hoagie and place 3 meatballs on the roll. Load down the meatballs with your favorite red sauce, parmesan cheese, mozzarella, and slices of provolone. Place the sub back in the oven for 5-8 minutes, or until the cheese reaches your desired bubbliness. Remove from oven, allow to cool for just a couple of minutes and enjoy! I love to serve my subs with a side of extra red sauce for dipping!
