256 calorie Greek salad with lower calorie orzo style pasta. I added marinated “feta” tofu for better macros and violife vegan feta for authentic taste. One of the best salads I’ve ever made.

    This has about 10 g of protein per serving, but you can boost that by adding more feta style tofu. Also the Fiber Gourmet pasta has 7 g protein per 110 cal, so you could add more of that.

    (Serve cold.)

    For three servings:

    * 24 g mini sweet pepper
    * 1/8 c fresh basil
    * 1/8 c fresh mint
    * 100 g [Marinated artichoke salad](https://www.heb.com/product-detail/h-e-b-artichoke-salad/850958) ( Soooo goood)
    * 64 g red onion
    * 123 g tomatoes
    * 237 g cucumber
    * 1/2 pkg extra firm tofu, marinated (see below for instructions)
    * 12 g violife feta (it’s vegan and delicious!! but high cal)
    * 2.25 oz sliced olives, pearl brand because it’s low cal packed in water
    * 1/2 serving Fiber Gourmet “rice” which is actually orzo like pasta

    Greek Salad Dressing:

    * 2 T red wine vinegar
    * .5 Tbsp oil
    * 1 tsp dijon mustard
    * .5 tsp sugar
    * salt, pepper to taste

    Marinade for tofu “feta”

    * 1 tsp miso paste
    * lemon juice
    * 1 tsp red wine vinegar
    * tsp dried oregano
    * dash of fennel
    * dash dried basil
    * ground pepper & red pepper to taste
