So background, my cholesterol is a little on the high side. My doctor suggested a Mediterranean diet for three months and a fiber supplement. My issue is, I don’t even know where to begin. It’s overwhelming for me. I drink black coffee in the morning. About 3 cups. in the mornings around 11am, I eat breakfast. Scramble kit cup (diced potatoes, bacon bits, cheese, 2 whole eggs), sourdough muffin with butter and sometimes little hashbrown circles. I typically don’t eat lunch. At work, on my break I’ve been opting for a Mountain Dew and a candy bar. I can easily change that by grabbing water and fruits/veggies. For dinner, it’s either fast food, or a grape jelly uncrustable and some Doritos. At night, I eat poptarts and big glass of milk before bed.

I know my diet is awful and I’m willing to change it. And try to change it. But I don’t care for seafood. I’ll eat tuna if I have too. I don’t like quinoa. Chia seeds. No olives. No avocado.

I’m super picky. 😢

What do I eat. What can I make and eat. Something that I don’t HAVE to be in the kitchen long. I hate cooking.

I’m a 32yo female, 5’3”, 146 pounds. I can definitely stand to lose some weight too and I plan to exercise a little more.
