My daughter loves making banana muffins and I have a recipe I’ve used for years. I updated it to replace brown/ white sugar with honey, AP flour with oat flour, and olive oil in place of traditional baking oil!

Ingredients:

1/3 C olive oil
1/2 C honey
2 eggs, room temp
2-3 over ripe bananas, mashed
1/4 milk (I used almond)
1 tsp baking soda
1 tsp vanilla extract
1/2 tsp salt
1 T cinnamon
1/2 tsp nutmeg
1/4 C roughly chopped walnuts

Directions:

1. Preheat oven to 325°F and grease a 12 cup muffin pan

2. Whisk together oil and honey then add eggs and beat well. Add bananas and milk until mixed then add baking soda, vanilla, salt, cinnamon and nutmeg

3. Add flour and walnuts and mix just enough to combine

4. Divide evenly into muffin tins, don’t overfill (should be about 3/4 full). Top each with one large walnut piece and a sprinkle of white sugar (optional). Bake 22-25 minutes until a toothpick comes out clean

5. Wait about 10 minutes then place muffins on cooling rack. I run a knife around the edges to make sure they come out more easily

Makes 12 muffins, serving size 1 muffin. 217 calories, 11.5g fat, 1.6g saturated fat, 28g total carbs, 2.3g fiber, 5.3g protein
