Moroccan Carrot Salad

INGREDIENTS
½ kg carrot
extra virgin olive oil
finely chopped fresh parsley
finely chopped fresh coriander
3 grated garlic cloves
1 teaspoon paprika
½ teaspoon ground cumin
½ teaspoon of salt
lemon or white vinegar
2 hot chilli peppers (optional)
DIRECTIONS
1. Peel carrots and boil until tender then dice
2. Place carrots in bowl, add 3 tablespoons of finely chopped parsley and coriander, add the rest of the ingredients along with 2 tablespoons of extra virgin olive oil and mix everything together. Add more oil if need be.
3. Garnish with lemon slices and parsley
