Roll it up like a herby cigar? ha ha
My grandmother (she’s german) used to make the best salad I’ve ever tasted. She’d cook the potatoes and chop them into a bowl, add chopped boiled eggs, grated gherkin, finely chopped Ballina (?) (its like devon but much nicer) and speck (?) (Sounds like shpeck, chunks of bacon) and she’d combine this with mayo. I don’t know what or if there was anything else or the ratios.
The mayo used to mix with the egg yolks and crushed potato to form a glue to combine the it all together, it was great. You’d eat it hot just after it was made and then the cold the next day when all the flavours had fused and mellowed.
If anyone knows how to make this please let me know.

I hesitate to disagree but if you put potatoes into boiling water then the outsides cook faster than the core and by the time the insides are cooked the outsides are wrecked. Maybe Jamie is only referring to small, new potatoes.
