18.Cheers- The lights go off and everyone in the kitchen comes out and serves a Honeydew drink with glow in the dark proteins from jellyfish topped with egg foam to stop the drink from oxidizing and losing the glow. The drink itself is super refreshing and delicious and reminds me of cucumber+ sweet apple. They also asked for no photos or videos at this time because the lights were off and they wanted us to see the glow of the drink (though one of you dumb Karens had to use your phone+also use flash didn’t you =w=).

20. Airy bread-Potato Starch Airy bread topped with jamon. The bread tastes like the flaked off shards of a croissant that have the most buttery and toasty flavor. Not much else to say but super tasty.
21.Hunger- cured rabbit with harissa and flowers. Kinda smells like sashimi almost. Tastes almost like a gentle pepperoni or a chorizo. I’m actually kinda bothered to eat it though because of a personal thing I have with bunnies lol.
22.Don’t waste your breath- windpipes of a pig with a tamarind sauce. Tastes like crunchy jellyfish with a bit of offal aftertaste. The tamarind sauce is super complex with a hint of cilantro and is a great accent but I can see why this isn’t for everyone.
23.Burnout Chicken-reminds me of Taiwanese popcorn chicken in the beginning with a strong herbacious kick. The flavors between the tamarind glaze n herbs are strong but work well n leave a bit of heat.
24.Soup on a Sausage peg-moldy bread with pork fat spread and pork bouillon. The Pork bouillon is herbal is a slightly hammy-bitter way? I guess that’s the pine needle flavor they mentioned. The bread with the pork fat spread kinda tastes like the cheesy corn bun I had growing up.
Act 3, Scene 4 (Desserts)
25. Reflection-blackcurrant leather with an ice cream sandwich on the bottom. You can see a reflection of a rainbow in it. Almost reminds me of a raspberry ganache + vanilla ice cream sandwich. I think they accidentally gave me a piece of plastic wrap/film they used in the prep and forgot to take out though lol.
26.Dessert Chateau Wine (Chateau d’Yquem Saternes 2005 )-They gave me a pour of this as an apology for the plastic in the previous impression I believe (So I don’t think you can count it amongst the other impressions generally speaking). I’m not a wine person usually but this was very sweet and almost buttery tasting, almost like a spiced caramel with hints of pineapple. This is one of the first wines I’ve ever had that I really enjoy/like, and I would definitely get a bottle of this again for a special occasion. Ofc these bottles run for $700-800 though so like drinking liquid gold lol.
27.Andy Warhol-a classic dessert here that tastes like the essence of banana in a sorbet with a little bit of tang and crunch from the candy shell. Very good and the aesthetic is great.
28.Roy boss and Mango Water Kefir-almost tastes like carbonated loquat juice. They offered me two more glasses of this because I find this quite refreshing (and also to make up again for the plastic I think lol).
29.Lifeline- Pigs blood ice cream. Tastes sweet but then has that lingering, bloody, organ aftertaste that I don’t particularly enjoy. Just a bit too much for me lol.
30.Guilty Pleasure- child labor free chocolate filled with caramel, mango, and peanuts. A good balanced semi sweet chocolate with a delicious slightly tropical tasting praline from the mango. My favorite dessert course.
Act 4 (Transitional)
31. The Ball Room- a big room with lots of white balls that you play with and sink into.
32.Tour of the Chefs Counter- we then toured the chefs counter and saw the stations where they prepped a lot of the food as well as the control pad they use to monitor all the guests and which courses they’re on. The control panel part reminds me of that scene from The Bear where someone’s monitoring all the tables and courses going out.
33. Amber-like a combination of honey and ginger candy. The outside has that distinct tanghulu crunch and the inside is like a jelly candy. Looks really cool too.
34.Cubic Margarita-like a cold hard jelly that melts in your mouth slowly. Really interesting texture to it.
35.In a Nutshell -hazelnut ice cream with hazelnut cream in a hazelnut flavored wrapper. Very nutty forward haha but not bad at all. A little basic though.
36.Tarte Tatin- a tarte tatin in a geometric shape, dressed with 24k gold. Like jellied apple with a super good caramel praline. Good ending to the food.
37.Brainstorm Room-basically a room filled with words that people have used to describe the restaurant from pretentious to innovating, etc. After that, we’re given a menu of all the impressions we had, given our belongings, and escorted out the door.
And that’s it for all the Impressions that I could physically keep track of. Assuming that all the art installations in the Main room are an impression, that would bring it up to about 45 impressions. They also, throughout the meal, give us lil bowls with hand towels in them to wipe our fingers off in the event that we use our hands. Each of those hand towels are soaked in a different type of citrus oil from grapefruit to yuzu to blood orange, etc so those might count to?

Overall, this experience lasted 6 hours with us sitting down at 5, and not leaving until about 11. Time felt like it passed pretty quickly though and overall, I was pleased with the experience,courses, and service. Pretty much all of the courses were tasty and engaging, and as someone who’s politically active + very knowledgeable about a lot of the topics mentioned in the impressions, I appreciate the direction and awareness they’re trying to take with this experience. The bathroom is excellent and clean, and the service is prompt and felt personable (unlike Epicure lol) except this one instance where we were ignored a bit, though I figure they were ramping up service for the other tables as more people came into the Main room so no biggy. The one hiccup which was the plastic film in one of the desserts was remedied well, because that Chateau Yquem…. wow, that’s the first time I’ve ever even LIKED a wine (I’m REALLY not an alcohol person, I just hate how it tastes). I’m glad that I was able to come and while it was expensive, this is one of those once in a lifetime restaurant experiences that people always end up talking about.
